So, what exactly is blackened fish? Blackening is a cooking technique that involves seasoning fish fillets with a blend of spices and then searing them in a hot skillet, typically cast iron. This method differs from traditional grilling or baking as it creates a distinctive, charred flavor and a crispy exterior while keeping the fish moist and flaky inside. The high heat caramelizes the spices, resulting in a crust that adds depth and richness to the dish.

Ingredients

1 lb white fish fillets (such as mahi-mahi, snapper, or tilapia)

2 tablespoons olive oil

1 tablespoon paprika

1 teaspoon cayenne pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

8 small corn or flour tortillas

1 cup shredded red cabbage

1 ripe avocado, sliced

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

1/4 cup sour cream or Greek yogurt (optional)

Hot sauce (optional)

Instructions

Prepare the Fish: Pat the fish fillets dry with paper towels to ensure they sear properly.

Make the Spice Mix: In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, oregano, salt, and black pepper.

Coat the Fish: Rub both sides of the fish fillets with the olive oil and then sprinkle the spice mixture generously over both sides, ensuring an even coating.

Heat the Pan: In a cast-iron skillet or non-stick pan, heat over high heat until it’s very hot, almost smoking.

Blacken the Fish: Carefully place the fish fillets in the skillet. Cook for about 3-4 minutes per side, or until a crust forms and the fish is cooked through (internal temperature should reach 145°F or 63°C).

Warm the Tortillas: During the last minute of cooking the fish, place the tortillas in another pan over medium heat for about 30 seconds on each side, or until warmed and slightly charred. You can also wrap them in foil and heat them in the oven if you prefer.

Assemble the Tacos: Once the fish is cooked, remove it from the skillet and let it rest for a minute. Then, break the fish into large chunks.

Build Your Tacos: On each tortilla, add a generous amount of blackened fish, then top with shredded cabbage, sliced avocado, and chopped cilantro.

Finishing Touches: Drizzle with sour cream or yogurt, if using, and add hot sauce for an extra kick. Squeeze fresh lime juice over the top for a zesty finish.

Serve and Enjoy: Serve the tacos warm with lime wedges on the side. Enjoy your flavorful blackened fish tacos!
