Blistered Tomato Baguette Bliss

1 French baguette

2 cups cherry tomatoes (mixed varieties for color)

4 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon balsamic vinegar

Salt and pepper to taste

½ cup fresh basil leaves, roughly torn

½ cup ricotta cheese

Zest of 1 lemon

Optional: Grated Parmesan or crumbled feta for garnishing

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Blister the Tomatoes: In a roasting pan, combine the cherry tomatoes, olive oil, minced garlic, thyme, balsamic vinegar, salt, and pepper. Toss well to coat the tomatoes evenly. Arrange them in a single layer and roast in the preheated oven for about 15-20 minutes or until the tomatoes are blistered and some have burst.

      Prepare the Baguette: While the tomatoes are roasting, slice the French baguette diagonally into ½-inch thick slices. Brush both sides of each slice with olive oil and arrange them on a baking sheet.

        Toast the Baguette: Once the tomatoes have blistered, remove them from the oven. Place the baguette slices in the oven and toast for about 5-7 minutes, flipping halfway through, until golden brown.

          Make the Ricotta Spread: In a small bowl, combine the ricotta cheese with the lemon zest, a pinch of salt, and pepper. Mix well until smooth.

            Assemble Your Bliss: Once the baguette slices are toasted, spread a generous layer of the lemon-ricotta mixture on each slice. Top with the blistered tomatoes, ensuring to include some of the delicious pan juices for extra flavor.
