BLT Egg Salad Lettuce Wraps

4 large eggs

4 slices of crispy bacon, chopped

1 medium tomato, diced

1/4 cup mayonnaise (or Greek yogurt for a healthier option)

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon fresh chives, chopped (optional)

8 large lettuce leaves (Romaine or Butter lettuce work best)

Sliced avocado for topping (optional)

Boil the Eggs: Place the eggs in a pot of water over medium heat. Once boiling, reduce the heat and let them simmer for 9-12 minutes. Remove from heat and transfer eggs to an ice bath to cool.

    Prepare the Bacon: While the eggs are cooling, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and place on a paper towel to absorb excess grease. Once cooled, chop into bite-sized pieces.

      Prep the Egg Salad Mixture: Peel the cooled eggs and chop them into small pieces. In a mixing bowl, combine the chopped eggs, mayonnaise (or Greek yogurt), Dijon mustard, garlic powder, salt, and pepper. Mix until smooth, then fold in the diced tomato, chopped bacon, and chives (if using). Adjust seasoning if needed.

        Assemble the Wraps: Take a lettuce leaf and spoon a generous amount of the BLT egg salad mixture into the center. If desired, add sliced avocado on top for extra creaminess.

          Serve: Roll or fold the lettuce wrap over the filling, securing it without tearing. Serve immediately for the best texture, or refrigerate for up to 2 hours if needed.
