Ingredients

1 cup fresh blueberries

8 oz (226 g) cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1/2 tsp lemon zest

1/4 tsp salt

1 cup graham cracker crumbs

3 tbsp unsalted butter, melted

1 tbsp brown sugar

1/4 cup chopped pecans (optional)

Fresh mint leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, brown sugar, and salt. Mix well until the crumbs are evenly coated. Press this mixture firmly into the bottom of a lined mini muffin tin to form a crust. Bake for 5-7 minutes until slightly golden. Remove from the oven and set aside to cool.

Make the Cream Cheese Filling: In another bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Gradually add the powdered sugar, vanilla extract, lemon zest, and salt, mixing until well combined.

Assemble the Bites: Once the crust has cooled, spoon a generous dollop of the cream cheese mixture into each muffin cup, filling it about 2/3 full. Gently press 2-3 blueberries into each bite, slightly pushing them into the cream cheese filling.

Chill: Place the filled muffin tin in the refrigerator for at least 1-2 hours, or until the filling is firm.

Serve: Once chilled, carefully pop the blueberry cream cheese bites out of the muffin tin. Garnish with chopped pecans and fresh mint leaves if desired. Serve immediately and enjoy the delightful blend of flavors!
