For the Base and Crumble:

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

For the Blueberry Filling:

2 cups fresh blueberries (or frozen, thawed and drained)

1/4 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1/2 teaspoon vanilla extract

Optional Toppings:

Powdered sugar for dusting

Whipped cream or vanilla ice cream for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving a little overhang for easy removal later.

    Make the Crust and Crumble:

      - In a mixing bowl, combine the flour, rolled oats, brown sugar, baking powder, and salt. Stir well to combine.

        - Pour in the melted butter and mix until the batter is crumbly and well combined.

          Press the Base into the Dish:

            - Reserve about 1 cup of the mixture for the crumble topping. Press the remaining mixture firmly into the bottom of the prepared baking dish to form an even layer.

              Prepare the Blueberry Filling:

                - In another bowl, mix together the fresh blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss to combine until the blueberries are well coated.

                  Assemble the Bars:

                    - Spread the blueberry filling evenly over the pressed crust in the baking dish.

                      - Sprinkle the reserved crumble mixture evenly on top of the blueberry filling.

                        Bake:

                          - Bake in the preheated oven for 30-35 minutes or until the crumble topping is lightly golden and the blueberries are bubbling.

                            Cool and Cut:

                              - Allow the bars to cool in the pan for about 15 minutes, then lift them out using the parchment overhang. Cool completely on a wire rack. Once cool, cut into squares or bars.

                                Serve:

                                  - Dust with powdered sugar if desired and serve with whipped cream or vanilla ice cream for an extra treat!
