2 ripe peaches, sliced

1 cup fresh blueberries

4 cups mixed baby greens (arugula, spinach, and kale)

1/2 cup crumbled feta cheese

1/4 cup walnuts, toasted

1/4 cup red onion, thinly sliced

1/4 cup balsamic vinaigrette

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Prepare the Base: Start by washing the mixed baby greens thoroughly under cold running water. Gently pat them dry with a clean towel or use a salad spinner to remove excess moisture. Place the greens in a large salad bowl.

    Add the Fruits: Slice the ripe peaches into thin wedges. If using firm peaches, you may want to leave them out for a minute to soften slightly. Add the peach slices and fresh blueberries to the baby greens.

      Incorporate Feta and Nuts: Crumble the feta cheese over the top of the salad. Sprinkle the toasted walnuts evenly throughout the salad. The nuts will add a nice crunch to complement the creaminess of the feta.

        Toss with Onions: Add the thinly sliced red onion to the salad for a pop of color and a slight bite.

          Dress the Salad: Drizzle the balsamic vinaigrette over the entire salad. If you prefer, you can adjust the amount to taste. Gently toss everything together to combine the flavors, taking care not to mush the feta.
