1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup soy sauce

1/4 cup bourbon

1/4 cup brown sugar

2 tablespoons apple cider vinegar

1 tablespoon minced garlic

1 tablespoon minced fresh ginger (or 1 tsp ginger powder)

1 tablespoon olive oil

1 teaspoon red pepper flakes (optional for heat)

1 green onion, sliced (for garnish)

Sesame seeds (for garnish)

Cooked rice (for serving)

Instructions
 

Marinate the Chicken: In a medium bowl, combine soy sauce, bourbon, brown sugar, apple cider vinegar, garlic, ginger, and red pepper flakes. Stir well until the sugar dissolves. Add the chicken pieces and coat them evenly. Cover and marinate in the refrigerator for at least 30 minutes, preferably 2 hours.

    Sauté the Chicken: In a large skillet over medium-high heat, add olive oil. Once hot, remove the chicken from the marinade, letting excess marinade drip off. Add the chicken pieces to the pan. Sauté for about 5-7 minutes until browned on all sides.

      Cook with the Marinade: Pour the reserved marinade into the skillet with the browned chicken. Bring it to a gentle boil, then reduce the heat to medium-low. Let it simmer for 10-15 minutes, stirring occasionally, until the sauce thickens and the chicken is cooked through.

        Serve: Once the sauce has thickened, remove the skillet from heat. Serve the bourbon chicken over cooked rice, garnished with sliced green onions and sesame seeds for added flavor and presentation.
