Boursin Pork Chops

4 bone-in pork chops (about 1 inch thick)

4 oz Boursin cheese (garlic & herb flavor)

1 cup fresh spinach, chopped

1/2 cup sun-dried tomatoes, chopped

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

1 tsp smoked paprika

Fresh parsley, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a bowl, combine the Boursin cheese, chopped spinach, sun-dried tomatoes, Parmesan cheese, minced garlic, salt, and pepper. Mix until well-combined.

      Prepare the Pork Chops: Using a sharp knife, cut a deep pocket into each pork chop (be careful not to cut all the way through). Season both sides of the pork chops with salt, pepper, and smoked paprika.

        Stuff the Chops: Generously fill each pork chop pocket with the Boursin cheese mixture. Press gently to secure the filling inside.

          Sear the Chops: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, carefully add the stuffed pork chops and sear for about 3-4 minutes on each side until golden brown.

            Transfer to Oven: Once seared, transfer the skillet to the preheated oven. Bake for 15-20 minutes or until the internal temperature of the pork reaches 145°F (63°C) and the juices run clear.

              Rest and Serve: Remove the skillet from the oven and let the pork chops rest for 5 minutes. Garnish with fresh parsley if desired, then serve immediately.
