6 large eggs

1 cup black beans, drained and rinsed

1 cup cooked sweet potatoes, diced (or roasted)

1 cup fresh baby spinach

1 cup shredded cheddar cheese

1/2 cup salsa (your choice of mild or spicy)

1 tsp paprika

1 tsp garlic powder

Salt and pepper to taste

6 large whole wheat tortillas

Optional toppings: avocado slices, cilantro, or jalapeños

Prep Work: Start by cooking your sweet potatoes. You can roast them in the oven at 400°F (200°C) for about 25 minutes, or boil them until tender. Allow to cool and then dice.

    Scramble Eggs: In a large skillet over medium heat, crack the eggs into a bowl. Whisk in paprika, garlic powder, salt, and pepper. Pour the eggs into the heated skillet and scramble until fully cooked and fluffy, about 5-7 minutes.

      Sauté Spinach: Once the eggs are scrambled, stir in the spinach and cook until just wilted. This should take about 2 minutes.

        Combine Filling: In a large bowl, combine the scrambled egg mixture with black beans, diced sweet potatoes, and half of the shredded cheese. Stir gently to mix everything well.

          Assemble Burritos: Lay out a tortilla and spoon about 1/6 of the mixture onto the center. Add a spoonful of salsa and sprinkle some of the remaining cheese on top. Fold in the sides of the tortilla and then roll it up tightly from the bottom.

            Wrap and Store: Wrap each burrito in foil or parchment paper, then place them in an airtight container or zip-top bag to keep them fresh.

              Reheat and Enjoy: When you’re ready to eat, remove the foil, and microwave each burrito for 2-3 minutes or until heated through. You can also reheat them in an oven at 350°F (175°C) for about 15-20 minutes if you prefer a crispy exterior.
