Ingredients
  

2 cups cooked brown rice

2 cups broccoli florets (fresh or frozen)

1 pound cooked chicken breast, shredded or diced

2 cups shredded sharp cheddar cheese

1 cup cream of mushroom soup (or homemade)

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup grated Parmesan cheese (optional, for topping)

1/2 cup breadcrumbs (optional, for topping)

1 tablespoon olive oil (if using fresh broccoli)

Instructions
 

Preheat your oven to 350°F (175°C).

    If using fresh broccoli, steam or sauté the florets in olive oil for about 5 minutes until slightly tender. Set aside. (If using frozen, you can add it directly to the mixture.)

      In a large mixing bowl, combine the cooked brown rice, shredded chicken, steamed broccoli florets, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Gradually fold in 1 ½ cups of shredded cheddar cheese, reserving the remaining ½ cup for topping.

          Transfer the mixture into a greased 9x13-inch (or similar size) baking dish, spreading it out evenly.

            Sprinkle the reserved cheddar cheese evenly over the top of the casserole.

              If using, mix the breadcrumbs and grated Parmesan cheese together in a small bowl, then sprinkle over the casserole for added crunch.

                Cover the casserole with aluminum foil (to avoid over-browning) and bake in the preheated oven for 25 minutes.

                  After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the casserole is bubbly and the top is golden brown.

                    Once done, remove from the oven and let it cool for about 5 minutes before serving.
