Brown Sugar Bourbon BBQ Ribs – Fall-Off-The-Bone Tender!

2 racks of baby back ribs (about 3-4 pounds)

1 tablespoon kosher salt

1 teaspoon black pepper

1 tablespoon smoked paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon cayenne pepper (optional, for heat)

1 cup brown sugar (packed)

1 cup bourbon

1 cup ketchup

1/2 cup apple cider vinegar

1/4 cup Worcestershire sauce

2 tablespoons Dijon mustard

1 tablespoon chili powder

1 teaspoon ground cumin

1 tablespoon cornstarch (optional, for thickening)

Fresh parsley (for garnish)

Prepare the Ribs: Preheat your oven to 275°F (135°C). Remove the silver skin from the back of the ribs by sliding a knife under the membrane and pulling it off with a paper towel for grip. This will help ensure the ribs are tender.

    Season the Ribs: In a small bowl, mix together the kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper (if using). Rub this spice mix liberally over both sides of the ribs.

      Bake the Ribs: Place the ribs on a baking sheet lined with foil (for easy cleanup) and cover them tightly with another piece of foil. Bake in the preheated oven for 3-4 hours, or until the ribs are tender and the meat starts to pull away from the bones.

        Make the BBQ Sauce: While the ribs are baking, prepare the BBQ sauce. In a medium saucepan over medium heat, combine the brown sugar, bourbon, ketchup, apple cider vinegar, Worcestershire sauce, Dijon mustard, chili powder, and cumin. Bring to a simmer while stirring occasionally. Let it cook for about 20 minutes until it thickens slightly. If you prefer it thicker, mix 1 tablespoon of cornstarch with a little water and stir it in until combined, cooking for a few more minutes.

          Glaze the Ribs: Once the ribs are done baking, remove them from the oven and carefully peel back the foil. Increase the oven temperature to 400°F (200°C). Brush a generous amount of BBQ sauce over the ribs.

            Broil for Finish: Return the ribs to the oven (uncovered) and broil for about 10-15 minutes, or until the sauce caramelizes and turns sticky. Keep a close eye on them to avoid burning.

              Serve: Remove the ribs from the oven and let them rest for about 10 minutes. Slice between the bones and serve with the remaining BBQ sauce on the side. Garnish with fresh parsley for a pop of color.
