1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, softened

1 cup packed brown sugar

1/2 cup granulated sugar

1 large egg

1 tablespoon vanilla extract

2 cups old-fashioned oats

1/2 cup chocolate chips (optional)

1/2 cup chopped walnuts or pecans (optional)

Preheat Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, using an electric mixer, cream together the softened butter, brown sugar, and granulated sugar on medium speed until it becomes light and fluffy (about 3-4 minutes).

        Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

          Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until combined. Do not overmix.

            Fold in Oats: Stir in the old-fashioned oats, and if desired, fold in the chocolate chips and chopped nuts until evenly distributed throughout the dough.

              Scoop Cookies: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
