Ingredients

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil

Optional: Fresh celery sticks and ranch or blue cheese dressing for serving

Instructions

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a large baking sheet with parchment paper.

Prepare the Batter: In a large mixing bowl, whisk together the flour, water, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper until smooth and well-combined.

Coat the Cauliflower: Add the cauliflower florets to the batter, ensuring each piece is evenly coated. Shake off any excess batter and arrange them on the prepared baking sheet in a single layer.

Bake the Florets: Drizzle the coated cauliflower with olive oil and bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through.

Mix in Buffalo Sauce: Once the cauliflower is roasted, remove it from the oven. Place the hot cauliflower bites in a large bowl, add the buffalo sauce, and toss gently to coat all the pieces evenly.

Bake Again: Return the sauced cauliflower to the baking sheet and bake for an additional 10 minutes to allow the sauce to set and intensify the flavor.

Serve: Serve immediately with fresh celery sticks and your choice of ranch or blue cheese dressing on the side for dipping. Enjoy your crispy, spicy Buffalo Cauliflower Bites!
