2 cups cooked chicken, shredded

1 cup buffalo sauce (adjust to taste)

4 cups shredded cheddar cheese (divided into 3 cups and 1 cup)

1 cup milk

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup blue cheese crumbles (optional)

1/4 cup chopped green onions (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.
