Buffalo Chicken Pasta Salad

8 oz. rotini pasta

1 cup cooked chicken, shredded

1/2 cup buffalo sauce

1/2 cup ranch dressing

1 bell pepper, diced (red or green)

1/2 cup red onion, diced

1 cup cherry tomatoes, halved

1 cup celery, diced

1/2 cup blue cheese crumbles

1/4 cup green onions, sliced (for garnish)

Salt and pepper, to taste

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water to stop cooking. Set aside.

    Prepare the Chicken: In a large mixing bowl, combine shredded chicken with buffalo sauce. Stir until the chicken is evenly coated. Set aside to marinate while the pasta cools.

      Mix the Dressing: In a separate bowl, whisk together the ranch dressing and an additional 2 tablespoons of buffalo sauce (adjust to taste for spiciness).

        Combine Ingredients: In a large bowl, add the cooled pasta, buffalo chicken, diced bell pepper, red onion, cherry tomatoes, and celery. Pour the ranch mixture over the top.

          Toss and Season: Gently toss all ingredients together until well combined. Season with salt and pepper to taste.

            Add Cheese and Garnish: Fold in the blue cheese crumbles, reserving some for topping, and give it one final gentle toss.

              Chill and Serve: Cover and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld. Before serving, garnish with sliced green onions and additional blue cheese if desired.
