2 cups butternut squash, peeled and shredded

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped fresh sage leaves

1/4 cup green onions, finely chopped

2 large eggs

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon smoked paprika

3 tablespoons olive oil (for frying)

Instructions
 

Preparation of Squash:

    - Start by peeling and shredding the butternut squash using a box grater or food processor. Place the shredded squash in a clean kitchen towel and squeeze out any excess moisture. This will help prevent the fritters from becoming soggy.

      Mix the Ingredients:

        - In a large mixing bowl, combine the shredded butternut squash, all-purpose flour, grated Parmesan cheese, chopped sage, green onions, eggs, garlic powder, onion powder, salt, black pepper, and smoked paprika. Mix well until all the ingredients are fully incorporated.

          Form the Fritters:

            - Using your hands, take about 1/4 cup of the mixture and form it into a patty. Repeat this step until all of the mixture is shaped into fritters.

              Heat the Oil:

                - In a large skillet, heat the olive oil over medium heat. You want the oil to be hot enough that when you add a fritter, it sizzles.

                  Fry the Fritters:

                    - Carefully place a few fritters in the skillet, making sure not to overcrowd the pan. Cook each fritter for about 3-4 minutes on one side until golden brown. Flip and cook for an additional 3-4 minutes on the other side.
