Ingredients

4 salmon fillets (6 oz each)

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh lemon juice

2 teaspoons dried Italian herbs (or 2 tablespoons fresh herbs like parsley, dill, or thyme)

Salt and pepper, to taste

1 lemon, thinly sliced

1 cup cherry tomatoes, halved

1 cup asparagus, trimmed

Fresh parsley, for garnish (optional)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Prepare Foil: Cut four sheets of aluminum foil, each about 12 inches long. Lay them flat on a clean surface.

Season Salmon: In a small bowl, mix the melted butter, minced garlic, lemon juice, dried herbs, salt, and pepper.

Assemble Packets: Place one salmon fillet in the center of each foil sheet. Drizzle each fillet with the garlic herb butter mixture, ensuring they are well coated.

Add Vegetables: Top each salmon fillet with a few slices of lemon, a handful of cherry tomatoes, and a few asparagus spears.

Seal Packets: Fold the sides of the foil over the salmon and vegetables, then roll up the ends to create a sealed packet. Make sure there's enough space inside the packets for steam to circulate.

Bake: Place the salmon packets on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve: Carefully open the foil packets to avoid steam. Garnish with fresh parsley if desired, and serve immediately with your favorite side dish.
