Ingredients

1 medium head of green cabbage, chopped

1 pound ground beef (85% lean)

1 medium onion, chopped

2 cloves garlic, minced

1 cup cooked rice (white or brown)

1 can (14.5 oz) diced tomatoes, with juice

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper, to taste

1 cup shredded cheddar cheese

1 tablespoon olive oil

Fresh parsley, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Cabbage: In a large pot of boiling water, blanch the chopped cabbage for about 5 minutes until slightly tender. Drain and set aside.

Cook the Beef: In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent (about 3-4 minutes). Add the ground beef, breaking it up with a spoon, and cook until browned (approximately 7-8 minutes). Drain excess fat.

Combine Ingredients: In the skillet with the beef, stir in the cooked rice, diced tomatoes (with juice), Italian seasoning, paprika, salt, and pepper. Mix well and cook for another 2-3 minutes to let the flavors meld.

Layer the Bake: In a greased baking dish (approximately 9x13 inches), layer half of the blanched cabbage at the bottom. Spread the beef and rice mixture evenly over the cabbage, then top with the remaining cabbage. Sprinkle the shredded cheddar cheese on top.

Bake the Dish: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

Serve: Allow the Cabbage Beef Bake to cool for a few minutes before serving. Garnish with fresh parsley if desired. Enjoy!
