Cabbage Sausage Soup

1 lb smoked sausage, sliced (such as kielbasa or chorizo)

4 cups green cabbage, chopped

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, chopped

4 cups chicken or vegetable broth

1 can (14.5 oz) diced tomatoes, undrained

1 tsp dried thyme

1 tsp smoked paprika

1 bay leaf

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Sauté the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pot and set aside.

    Cook the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Combine Ingredients: Add the chopped cabbage, sautéed sausage, broth, diced tomatoes (with their juices), thyme, smoked paprika, bay leaf, salt, and pepper. Stir to combine everything.

        Simmer: Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for 30 minutes, stirring occasionally, until the cabbage is tender and the flavors meld together.

          Final Touches: Taste the soup and adjust seasoning if needed. Remove the bay leaf before serving.

            Serve: Ladle the soup into bowls and garnish with freshly chopped parsley. Enjoy hot!
