Ingredients

2 lbs chicken wings

1 tablespoon olive oil

Salt, to taste

Freshly ground black pepper, to taste

1 cup grated Pecorino Romano cheese

1/2 cup unsalted butter, melted

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken Wings: Preheat your oven to 425°F (220°C). Rinse the chicken wings under cold water and pat them dry with paper towels. This step is crucial for achieving crispy skin.

Season the Wings: In a large bowl, toss the wings with olive oil, salt, and a generous amount of freshly ground black pepper. Make sure every wing is well-coated.

Bake the Wings: Spread the seasoned wings in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 40-45 minutes, flipping them halfway through, until they are golden brown and crispy.

Make the Cacio e Pepe Sauce: While the wings are baking, prepare the sauce. In a small saucepan over medium heat, combine the melted butter, lemon juice, and a few dashes of salt and black pepper. Stir until well mixed; remove from heat.

Add Cheese: As soon as the wings are done baking, transfer them to a large mixing bowl. Pour the melted butter mixture over the hot wings and toss well to coat.

Cheese Time: Immediately sprinkle the grated Pecorino Romano cheese over the wings while tossing. The heat from the wings will help the cheese adhere and melt slightly, creating a creamy-like sauce.

Garnish and Serve: Transfer the wings to a serving platter, garnish with chopped fresh parsley, and add more cracked black pepper if desired. Serve immediately.
