Cajun Sausage and Rice Skillet

Ingredients
  

1 lb Cajun smoked sausage, sliced

1 cup long-grain white rice

1 medium onion, diced

1 green bell pepper, chopped

1 red bell pepper, chopped

2 cloves garlic, minced

1 can (14 oz) diced tomatoes, undrained

3 cups chicken broth

1 tablespoon Cajun seasoning

1 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 bay leaf

2 tablespoons olive oil

Fresh parsley, chopped, for garnish

Instructions
 

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced Cajun sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    In the same skillet, add diced onions, green bell pepper, and red bell pepper. Sauté until the vegetables are softened, about 3-5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Stir in the rice and cook for about 2 minutes, allowing it to absorb the flavors and toast slightly.

        Add the diced tomatoes (with juice), chicken broth, Cajun seasoning, thyme, paprika, salt, black pepper, and bay leaf. Stir to combine all ingredients.

          Return the browned sausage to the skillet, stirring to evenly distribute. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.

            Once cooked, remove the bay leaf. Fluff the rice with a fork and adjust the seasoning if necessary.
