Ingredients

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 medium onion, chopped

4 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for heat preference)

Salt and pepper to taste

1 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add fettuccine and cook according to package directions until al dente. Drain and set aside.

Season the Shrimp: In a bowl, toss the shrimp with Cajun seasoning, ensuring they are well-coated.

Sauté the Vegetables: In a large skillet, heat olive oil over medium-high heat. Add the chopped onion, red bell pepper, and green bell pepper. Sauté for about 5-7 minutes until the vegetables are softened.

Add Garlic and Shrimp: Stir in the minced garlic and cook for an additional minute until fragrant. Then, add the seasoned shrimp to the skillet, cooking for 2-3 minutes, or until the shrimp turn pink and opaque.

Make the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Add smoked paprika, cayenne pepper, salt, and pepper. Bring the mixture to a simmer, allowing it to thicken slightly for about 3-4 minutes.

Combine Pasta & Sauce: Add the drained fettuccine to the skillet, tossing everything together until the pasta is evenly coated with the sauce. If the sauce is too thick, feel free to add a little more chicken broth.

Finish with Cheese: Remove from heat and stir in the grated Parmesan cheese until melted and creamy.

Serve: Garnish with fresh parsley and additional Parmesan cheese if desired. Serve warm and enjoy!
