Cajun Shrimp Stuffed Avocados

2 ripe avocados

1 pound of large shrimp, peeled and deveined

1 teaspoon Cajun seasoning

1 tablespoon olive oil

1/4 cup red bell pepper, finely chopped

1/4 cup green onion, thinly sliced

1/4 cup corn (fresh, frozen, or canned)

1/4 cup cherry tomatoes, halved

1/4 cup cream cheese, softened

1 tablespoon fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Optional: Hot sauce for serving

Prepare the Shrimp: In a medium bowl, toss the peeled and deveined shrimp with Cajun seasoning and a pinch of salt and pepper. Make sure they are evenly coated.
