Caprese Pasta Salad

8 oz (225 g) fusilli pasta (or your choice of pasta)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved or quartered

1 cup fresh basil leaves, roughly chopped

½ cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 clove garlic, minced

Salt, to taste

Freshly ground black pepper, to taste

Optional: Red pepper flakes, for a bit of heat

Cook the Pasta: In a large pot of salted boiling water, cook the fusilli pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, minced garlic, salt, black pepper, and optional red pepper flakes until well combined. Taste and adjust seasoning as needed.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, halved cherry tomatoes, and mozzarella balls. Gently fold in the chopped basil leaves.

        Dress the Salad: Drizzle the prepared dressing over the pasta salad, ensuring all ingredients are well-coated. Toss gently to combine without breaking the mozzarella balls.

          Refrigerate: For best flavor, cover the salad and let it marinate in the refrigerator for at least 30 minutes before serving, allowing the flavors to meld.
