4 large Portobello mushrooms

1 cup fresh mozzarella balls (bocconcini), halved

2 medium ripe tomatoes, diced

1 cup fresh basil leaves, chopped

2 tablespoons balsamic glaze

2 tablespoons extra-virgin olive oil

3 cloves garlic, minced

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C).

    Prepare the Mushrooms: Clean the Portobello mushrooms with a damp cloth to remove any dirt. Remove the stems and scoop out the gills gently with a spoon to create enough space for the filling.

      Make the Filling: In a medium bowl, combine the halved mozzarella, diced tomatoes, chopped basil, balsamic glaze, minced garlic, olive oil, salt, pepper, and red pepper flakes (if using). Stir well to ensure all ingredients are mixed evenly.

        Stuff the Mushrooms: Place the Portobello mushrooms on a baking sheet, gill side up. Generously fill each mushroom cap with the Caprese filling mixture.

          Bake the Mushrooms: Roast the stuffed mushrooms in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.

            Garnish and Serve: Remove the mushrooms from the oven and let them cool slightly. Drizzle with additional balsamic glaze if desired, and garnish with fresh basil leaves before serving.
