For the caramel peach topping:

2 medium ripe peaches, sliced

1/2 cup brown sugar

4 tablespoons unsalted butter

1 teaspoon vanilla extract

1/4 teaspoon cinnamon (optional)

For the pancake batter:

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons vegetable oil or melted butter

1/2 teaspoon vanilla extract

Prepare the Caramel Sauce: In a large skillet, melt the butter over medium heat. Add the brown sugar, vanilla extract, and cinnamon. Stir until the sugar is dissolved and the mixture is smooth. Add the sliced peaches and cook for about 3-4 minutes, until softened and caramelized. Remove from heat and set aside.

    Mix the Dry Ingredients: In a mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.

      Prepare the Wet Ingredients: In another bowl, whisk together the buttermilk, egg, vegetable oil (or melted butter), and vanilla extract until combined.

        Combine Dry and Wet Ingredients: Pour the wet mixture into the dry ingredients. Gently stir until just combined; it’s okay if there are a few lumps. Do not overmix for fluffy pancakes!
