Caramel Pecan Pumpkin Cobbler

For the Pumpkin Filling:

1 can (15 oz) pure pumpkin puree

3/4 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup heavy cream

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon salt

For the Topping:

1 cup all-purpose flour

1 cup rolled oats

1/2 cup brown sugar, packed

1/2 cup walnuts, chopped

1 cup pecans, toasted and chopped

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, melted

For the Caramel Sauce:

1 cup granulated sugar

6 tablespoons unsalted butter

1/2 cup heavy cream

1/4 teaspoon salt

1 teaspoon vanilla extract

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C).

      Prepare the Pumpkin Filling:

        In a large mixing bowl, combine the pumpkin puree, brown sugar, granulated sugar, heavy cream, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Whisk until smooth and well combined.

          Prepare the Topping:

            In another bowl, mix together the flour, oats, brown sugar, walnuts, pecans, baking powder, baking soda, and salt. Pour in the melted butter and stir until the mixture is crumbly but holds together when pressed.

              Assemble the Cobbler:

                Pour the pumpkin filling into a greased 9x13 inch baking dish. Evenly distribute the topping over the pumpkin filling.

                  Bake:

                    Place the dish in the preheated oven and bake for 40-45 minutes, or until the topping is golden brown and a toothpick inserted into the center comes out clean.

                      Make the Caramel Sauce:

                        While the cobbler is baking, prepare the caramel sauce. In a medium saucepan over medium heat, melt the sugar, stirring constantly until it becomes a liquid and turns a golden amber color. Remove from heat and carefully add butter. Stir until melted, then slowly whisk in the heavy cream and salt. Add vanilla extract and stir until smooth.

                          Serve:

                            Once the cobbler is done, remove it from the oven and allow it to cool slightly. Serve warm pieces topped with a drizzle of homemade caramel sauce and a scoop of vanilla ice cream, if desired.
