Ingredients

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

2 ripe bananas, sliced

1/4 cup brown sugar

2 tablespoons butter

1/4 cup rum (or banana liqueur)

1/4 teaspoon cinnamon

Whipped cream (for serving)

Chopped nuts (such as walnuts or pecans, for garnish)

Instructions

Prepare the Pancake Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, combine the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined (a few lumps are okay).

Make the Caramelized Bananas: In a medium skillet over medium heat, melt the 2 tablespoons of butter. Add the sliced bananas and cook for about 2 minutes until they begin to soften. Sprinkle in the brown sugar and cinnamon, and gently stir to combine. Allow the mixture to caramelize for another 2-3 minutes. Carefully pour in the rum, and let it bubble for about 1 minute, then remove from heat.

Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or butter. Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip the pancakes and cook for an additional 1-2 minutes until golden brown.

Assemble and Serve: Stack the pancakes on a plate, and generously spoon the caramelized banana mixture over the top. Add a dollop of whipped cream and sprinkle with chopped nuts for added crunch.

Enjoy: Serve immediately while warm and enjoy your delightful Caramelized Banana Foster Pancakes!
