Ingredients

4 slices of thick-cut brioche or challah bread

2 ripe bananas, sliced

3 large eggs

1 cup whole milk

1 tsp vanilla extract

1 tsp ground cinnamon

2 tbsp butter (for frying)

2 tbsp brown sugar (for caramelizing)

Maple syrup (for serving)

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the Egg Mixture: In a medium bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until completely combined. This will be your custard for the French toast.

Soak the Bread: Dip each slice of brioche or challah into the egg mixture, ensuring that both sides are well-coated. Allow the bread to soak for about 2-3 minutes per side to absorb the flavors.

Caramelize the Bananas: In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced bananas and sprinkle the brown sugar on top. Cook for about 2-3 minutes, gently stirring until the bananas are caramelized and golden brown. Once done, remove them from the skillet and set aside.

Cook the French Toast: In the same skillet, add the remaining tablespoon of butter. Place the soaked bread slices in the skillet, cooking for about 3-4 minutes on each side, or until golden brown and crispy.

Assemble the Dish: Layer the caramelized bananas on top of each French toast slice as they come off the skillet. You can stack them or fan them out for a beautiful presentation.

Serve: Drizzle with maple syrup and garnish with fresh mint leaves, if desired. Serve warm, and enjoy your delicious Caramelized Banana French Toast!
