1 cup rolled oats

2 cups milk (or any plant-based milk)

1 ripe banana, sliced

1 tablespoon brown sugar (or honey)

1 tablespoon butter (or coconut oil for a vegan option)

1/2 teaspoon ground cinnamon

A pinch of salt

Chopped nuts (e.g. walnuts or pecans) for topping

Optional: maple syrup for drizzling

Cook the Oats: In a medium saucepan, bring the milk to a simmer over medium heat. Add the rolled oats and a pinch of salt. Stir well and reduce the heat to low. Cook for about 5 minutes, stirring occasionally, until the oats absorb most of the liquid and reach your desired consistency.

    Caramelize the Bananas: While the oats are cooking, heat a non-stick skillet over medium heat. Add the butter and let it melt. Once melted, add the sliced banana and brown sugar (or honey). Stir gently to coat the bananas in the molten butter and sugar. Cook for about 2-3 minutes, or until the bananas are golden brown and caramelized. Remove from heat.

      Combine & Season: Once the oats are cooked, stir in the ground cinnamon. Adjust sweetness by adding a touch of maple syrup if desired.
