Ingredients

2 large onions, thinly sliced

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

1 teaspoon dried oregano

1 pound pizza dough (store-bought or homemade)

Flour, for dusting

Extra olive oil, for brushing

Instructions

Caramelize the Onions:

    - In a large skillet, heat the olive oil and butter over medium heat. Add the thinly sliced onions and stir to coat them in the oil. Cook for about 20-25 minutes, stirring occasionally, until the onions are soft and golden brown.

      - Sprinkle the sugar, salt, and black pepper over the onions. Cook for an additional 5 minutes, allowing them to caramelize further. Remove from heat and let cool slightly.

        Prepare the Filling:

          - In a mixing bowl, combine the cooled caramelized onions, crumbled feta cheese, chopped parsley, and dried oregano. Mix until well combined. Set aside.

            Prepare the Dough:

              - On a lightly floured surface, divide the pizza dough into 6 equal portions. Roll each portion into a ball and then flatten into a circle about 6 inches in diameter, ensuring the edges are slightly thicker than the center.

                Stuff the Flatbreads:

                  - Place about 2-3 tablespoons of the caramelized onion and feta mixture in the center of each flatbread. Be careful not to overfill. Fold the dough over the filling to create a half-moon shape and press the edges to seal tightly. You can crimp the edges with a fork for a decorative touch.

                    Cook the Flatbreads:

                      - Preheat a large skillet or non-stick pan over medium heat. Lightly brush both sides of the stuffed flatbreads with olive oil.

                        - Cook each flatbread for about 4-5 minutes on each side, or until golden brown and crispy. You may need to do this in batches, so keep the cooked flatbreads warm in a low oven while you finish the rest.

                          Serve:

                            - Serve the caramelized onion and feta stuffed flatbreads warm, garnished with additional parsley if desired. They pair wonderfully with a side of tzatziki or a simple salad.
