Ingredients
  

1 pre-made puff pastry sheet (thawed)

3 large yellow onions, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

Salt and pepper to taste

4 ounces goat cheese, crumbled

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 tablespoon balsamic vinegar

1 egg (for egg wash)

Fresh arugula (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Caramelize the Onions:

      - In a large skillet, combine the butter and olive oil over medium heat.

        - Add the sliced onions and a pinch of salt, stirring occasionally for about 15 minutes until soft.

          - Stir in the sugar to help with caramelization and continue to cook for another 10-15 minutes until the onions are golden brown and caramelized.

            - Add balsamic vinegar to deglaze the pan, scraping up any brown bits. Cook for another 2-3 minutes until thickened. Remove from heat and let cool.

              Prepare the Pastry:

                - Roll out the puff pastry sheet on a lightly floured surface to smoothen and slightly enlarge it.

                  - Transfer the pastry to a baking sheet lined with parchment paper.

                    Assemble the Tart:

                      - Score a 1-inch border around the edge of the pastry, being careful not to cut all the way through.

                        - Poke the center of the pastry with a fork to prevent it from puffing up too much while baking.

                          - Spread the caramelized onions evenly within the scored border.

                            - Evenly distribute the crumbled goat cheese and sprinkle fresh thyme leaves over the top.

                              Egg Wash:

                                - Beat the egg in a small bowl and brush it over the border of the pastry for a golden finish.

                                  Bake the Tart:

                                    - Place the prepared tart in the preheated oven and bake for 20-25 minutes, or until the pastry is puffed and golden brown.

                                      Serve:

                                        - Let the tart cool slightly before slicing.

                                          - Optionally, serve with a handful of fresh arugula on the side for a peppery contrast.
