4 chicken thighs (bone-in, skin-on)

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon allspice

1/2 teaspoon cayenne pepper (adjust to taste)

Juice of 2 limes

Zest of 1 lime

1/4 cup coconut milk

1/4 cup pineapple juice

2 tablespoons brown sugar

Fresh cilantro for garnish

Lime wedges for serving

Marinate the Chicken: In a large bowl, combine olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, allspice, and cayenne pepper. Add lime juice and zest, coconut milk, pineapples juice, and brown sugar. Mix to create a marinade.

    Coat the Chicken: Add the chicken thighs to the marinade, ensuring they are well coated. Cover with plastic wrap and refrigerate for at least 2 hours (or up to overnight for best flavor).

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Sear the Chicken: Heat a large oven-safe skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and place skin side down in the skillet. Sear for about 5-7 minutes until the skin is golden and crispy.

          Add the Marinade: Flip the chicken thighs and pour the reserved marinade over them. Bring to a gentle simmer.

            Bake the Chicken: Transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
