2 lbs beef chuck roast, cut into 1-inch cubes

4 medium potatoes, peeled and diced

1 large onion, finely chopped

4 cloves garlic, minced

1 bell pepper (any color), chopped

2 cups beef broth

1 cup diced tomatoes (canned or fresh)

1 tablespoon tomato paste

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro for garnish (optional)

Prepare the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Add them to the pot in batches, browning them on all sides. Remove the browned beef and set it aside.

    Sauté Vegetables: In the same pot, add the chopped onion, bell pepper, and minced garlic. Sauté for about 5-7 minutes until the vegetables are softened and fragrant.

      Combine Ingredients: Stir in the browned beef, diced tomatoes, tomato paste, cumin, smoked paprika, oregano, and beef broth. Mix well to combine all ingredients, scraping any browned bits from the bottom of the pot.
