2 large carrots, peeled and grated

1 large apple (preferably a sweet variety like Fuji or Honeycrisp), cored and grated

1/2 cup raisins or dried cranberries

1/4 cup walnuts or pecans, roughly chopped

2 tablespoons fresh lemon juice

2 tablespoons honey or maple syrup

1/4 teaspoon ground cinnamon

Pinch of salt

2 tablespoons fresh parsley or mint, chopped (optional, for garnish)

Instructions
