1 cup rolled oats

1 cup finely grated carrots (about 2 medium carrots)

1/2 cup almond butter (or any nut butter of your choice)

1/3 cup honey or maple syrup

1/2 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup crushed walnuts or pecans (optional)

1/4 cup unsweetened shredded coconut (optional)

1/4 cup raisins or chopped dates (for sweetness)

Instructions
 

Prep the Carrots: Start by washing and peeling the carrots. Use a box grater or food processor to finely grate the carrots, then set them aside.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground cinnamon, ground nutmeg, and salt. If you're adding nuts, coconut, and dried fruits, mix them in as well.

      Combine Wet Ingredients: In another bowl, mix the almond butter, honey or maple syrup, and vanilla extract until well blended.

        Combine Everything: Pour the wet mixture into the dry ingredients bowl and add the grated carrots. Stir thoroughly until all the ingredients are well combined, ensuring everything is evenly distributed.

          Chill the Mixture: Cover the bowl with plastic wrap and let it chill in the refrigerator for about 30 minutes. This helps the mixture firm up, making it easier to shape into balls.

            Shape the Energy Balls: Once the mixture has chilled, take it out and scoop about a tablespoon of the mixture (or use a small cookie scoop) into your hands. Roll it into a ball shape and place it on a parchment-lined baking sheet. Repeat until all the mixture is shaped into balls.
