½ cup pickled vegetables (such as carrots and radishes)

2 tablespoons olive oil

3 green onions (finely chopped)

2 cloves garlic (minced)

2 large eggs (beaten)

2 tablespoons soy sauce

1 tablespoon balsamic glaze (optional)

Salt and pepper to taste

Fresh herbs (optional, for garnish, like parsley or basil)

Prepare your ingredients: If using day-old rice, break apart any clumps and set it aside. Chop charcuterie meats, cheese, olives, and pickled vegetables, and have your garlic and green onions ready.
