Ingredients

2 cups grated potatoes (about 2 large potatoes)

1 cup shredded sharp cheddar cheese

½ cup cooked and crumbled bacon (about 4 strips)

1 large egg

¼ cup all-purpose flour

2 green onions, chopped

1 tsp garlic powder

½ tsp onion powder

Salt and pepper to taste

2 tbsp vegetable oil (for frying)

Sour cream or Greek yogurt (for serving, optional)

Instructions

Prepare Potatoes:

    - Grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture. This will help prevent soggy pancakes.

      Mix Ingredients:

        - In a large mixing bowl, combine the squeezed potatoes, sharp cheddar cheese, crumbled bacon, egg, flour, chopped green onions, garlic powder, onion powder, salt, and pepper. Mix until well combined.

          Form Patties:

            - With clean hands, take a handful of the mixture and form it into a patty about ½-inch thick. Repeat until all the mixture is used up, placing formed patties on a plate.

              Heat the Oil:

                - In a large skillet, heat the vegetable oil over medium-high heat. Make sure the oil is hot but not smoking.

                  Cook Patties:

                    - Carefully add the patties to the hot skillet, cooking in batches if necessary. Cook for about 4-5 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to prevent burning.

                      Drain and Serve:

                        - Once golden and crispy, transfer the pancakes to a paper towel-lined plate to drain any excess oil. Serve warm with a dollop of sour cream or Greek yogurt on the side, if desired.

                          Enjoy:

                            - Dig in and savor the crispy, cheesy goodness of your homemade Cheddar Bacon Potato Pancakes!
