Cheddar Hatch Chili Pull-Apart Muffins

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1 cup sharp cheddar cheese, grated

1 cup hatch green chilies, roasted and diced (canned or fresh)

1/4 cup unsalted butter, melted

1 cup buttermilk

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

Optional: Extra cheese and diced chilies for topping

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or line with muffin liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, and onion powder until well combined.

      Add Cheese and Chilies: Gently fold in the grated cheddar cheese and diced hatch chilies into the dry mixture, ensuring they are evenly distributed.

        Combine Wet Ingredients: In a separate bowl, whisk together the melted butter, buttermilk, and eggs until smooth.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

            Fill Muffin Tins: Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full. If desired, sprinkle extra cheese and diced chilies on top for added flavor.
