Cheese Stuffed Jalapenos

Ingredients
  

12 large jalapeño peppers

1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup cooked and crumbled bacon (optional)

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup panko breadcrumbs (for topping)

Olive oil (for drizzling)

Instructions
 

Preheat your oven to 400°F (200°C).

    Carefully cut the jalapeños in half lengthwise and remove the seeds and membranes (use gloves to prevent irritation).

      In a mixing bowl, combine the cream cheese, cheddar cheese, crumbled bacon (if using), green onions, garlic powder, smoked paprika, salt, and pepper. Mix until well combined.

        Using a spoon, fill each jalapeño half with the cheese mixture, pressing it in to ensure it's packed tightly.

          Place the stuffed jalapeños on a baking sheet lined with parchment paper.

            In a separate bowl, combine panko breadcrumbs with a drizzle of olive oil. Mix until the breadcrumbs are lightly coated.

              Sprinkle the breadcrumb mixture generously over each stuffed jalapeño for a crispy topping.

                Bake in the preheated oven for 20-25 minutes, or until the jalapeños are tender and the topping is golden brown.

                  Remove from the oven and let cool for a few minutes before serving.
