12 large ripe strawberries

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1/2 cup whipped cream (or Cool Whip)

1/4 cup graham cracker crumbs

Fresh mint leaves for garnish (optional)

Instructions
 

Rinse the strawberries under cold water and gently pat them dry with a paper towel.

    Slice the top off each strawberry and carefully hollow out the center using a small melon baller or a paring knife, creating a little cup for the cheesecake filling.

      In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat on medium speed until smooth and well-blended.

        Gently fold in the whipped cream until the mixture is light and fluffy.

          Transfer the cheesecake mixture into a piping bag (or a resealable plastic bag with the corner cut off for piping).

            Fill each hollowed strawberry with the cheesecake mixture, generously piping it in to make it look beautiful and abundant.

              Sprinkle the tops with graham cracker crumbs to mimic a cheesecake crust.

                Optionally, garnish with a mint leaf for a pop of color.

                  Arrange the filled strawberries on a platter and refrigerate for at least 30 minutes before serving.
