For the Crust:

1 ½ cups chocolate wafer cookies, crushed

½ cup unsalted butter, melted

2 tablespoons sugar

For the Filling:

24 oz cream cheese, softened

1 cup granulated sugar

4 large eggs

1 teaspoon vanilla extract

8 oz Godiva chocolate, melted and slightly cooled

½ cup sour cream

1 cup heavy cream

For the Topping:

4 oz Godiva chocolate, grated or shaved

½ cup whipped cream

Chocolate curls or shavings for garnish (optional)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium bowl, combine the crushed chocolate wafer cookies, melted butter, and sugar until well mixed.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

          Prepare the Filling:

            - In a large mixing bowl, beat the softened cream cheese until smooth and creamy, about 2-3 minutes.

              - Gradually add the granulated sugar and beat until fully incorporated.

                - Add the eggs one at a time, mixing well after each addition. Then, blend in the vanilla extract.

                  - Slowly pour in the melted Godiva chocolate until the mixture is smooth and uniform.

                    - Fold in the sour cream until just combined.

                      Bake the Cheesecake:

                        - Pour the cheesecake filling over the cooled crust and smooth the top with a spatula.

                          - Bake for 55-65 minutes, or until the center is set but slightly jiggles when moved.

                            - Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

                              - Remove from the oven and refrigerate for at least 4 hours, preferably overnight.

                                Prepare the Topping:

                                  - In a mixing bowl, whip the heavy cream until soft peaks form.
