2 lbs (about 1 kg) Yukon Gold potatoes, thinly sliced

2 tablespoons unsalted butter

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup whole milk

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon salt

½ teaspoon black pepper

2 cups shredded sharp cheddar cheese

1 cup grated Gruyère cheese

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 3-quart baking dish with butter or cooking spray.

    Sauté onions and garlic: In a medium saucepan, melt the butter over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Prepare the creamy sauce: Pour in the heavy cream and whole milk, and whisk to combine. Add in the thyme, salt, black pepper, half of the cheddar cheese, and half of the Gruyère cheese. Stir until the cheese is melted and the mixture is smooth.

        Layer the potatoes: Arrange half of the sliced potatoes in the bottom of the prepared baking dish. Pour half of the creamy sauce over the potatoes. Repeat with the remaining potatoes and sauce.

          Add remaining cheese: Top the layered potatoes with the remaining cheddar and Gruyère cheese. Finally, sprinkle the grated Parmesan on top for an extra cheesy crust.

            Bake: Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 30 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
