1 medium cauliflower head, cut into bite-sized florets

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

2 large eggs

1/2 cup bread crumbs (or almond flour for gluten-free)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons fresh parsley, chopped (plus extra for garnish)

Olive oil spray or extra virgin olive oil for drizzling

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: In a large pot, bring water to a boil. Add the cauliflower florets and blanch them for about 3-4 minutes, until they are tender but still crisp. Drain well and allow them to cool slightly.

      Mix the Coating: In a large mixing bowl, combine the shredded cheddar cheese, grated Parmesan cheese, eggs, bread crumbs (or almond flour), garlic powder, onion powder, smoked paprika, salt, pepper, and chopped parsley. Mix well until a cohesive mixture forms.

        Combine Cauliflower and Mixture: Add the blanched cauliflower florets to the cheese mixture. Gently fold and stir until the cauliflower is evenly coated with the cheesy mixture.
