Cheesy Baked Spinach Ricotta Pasta

12 oz (340g) uncooked pasta (penne, rigatoni, or fusilli)

2 tablespoons olive oil

3 cloves garlic, minced

10 oz (280g) fresh spinach (or 1 package frozen spinach, thawed and drained)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/2 teaspoon red pepper flakes (optional)

1/2 cup marinara sauce (plus more for serving if desired)

Fresh basil or parsley, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Spinach: In a large skillet over medium heat, add the olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add the fresh spinach (or thawed frozen spinach) and cook until wilted, about 3-4 minutes. Season with salt, pepper, and red pepper flakes (if using).

      Mix the Cheese Filling: In a large mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, the egg, Italian seasoning, and salt and pepper. Mix until well combined.

        Combine Ingredients: Add the cooked pasta, sautéed spinach, and marinara sauce to the cheese mixture. Stir gently until all ingredients are combined and coated evenly.

          Transfer to Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish. Pour the pasta mixture into the dish and spread it out evenly.

            Add Toppings: Sprinkle the remaining mozzarella and Parmesan cheeses over the top of the pasta. If desired, add a few spoonfuls of extra marinara sauce on top.

              Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
