Ingredients

2 cups cooked rice (white or brown)

1 lb chicken breast, diced

2 cups fresh broccoli florets

1 cup shredded cheddar cheese (or cheese of your choice)

1 medium onion, diced

2 cloves garlic, minced

1 cup chicken broth

1 cup milk

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

Optional: Fresh parsley for garnish

Instructions

Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, and paprika. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

Cook Vegetables: In the same skillet, add the diced onion and cook for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional 1 minute until fragrant.

Add Broccoli: Stir in the broccoli florets and cook for another 3-4 minutes, allowing them to become vibrant green and tender-crisp.

Combine Ingredients: Return the cooked chicken back to the skillet. Add the cooked rice, chicken broth, and milk. Stir well to combine all ingredients. Bring to a simmer and let it cook for about 5-7 minutes until most of the liquid has absorbed.

Add Cheese: Lower the heat and add the shredded cheddar cheese into the skillet. Stir until the cheese is melted and everything is well combined. Adjust seasoning with more salt and pepper if desired.

Serve: Remove from heat and garnish with fresh parsley if using. Serve hot as a delightful one-pan meal!
