2 cups cooked rice (white or brown)

2 cups fresh broccoli florets (or 1 cup frozen)

1 cup shredded sharp cheddar cheese

1 cup cream of mushroom soup (or homemade equivalent)

1/2 cup milk

1 small onion, diced

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon paprika (optional)

1/2 cup breadcrumbs (for topping)

2 tablespoons olive oil (for sautéing)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for another minute until fragrant. Remove from heat.

      Prepare Broccoli: If using fresh broccoli, blanch the florets in boiling water for 2-3 minutes until slightly tender, then drain and set aside. If using frozen broccoli, make sure to thaw and drain excess water.

        Mix Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onion and garlic, blanched broccoli, cream of mushroom soup, milk, shredded cheddar cheese, salt, pepper, and paprika if using. Stir until everything is well combined.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch casserole dish, spreading it out evenly.

            Prepare Topping: In a small bowl, mix the breadcrumbs with a little olive oil or melted butter until they are coated. Sprinkle the breadcrumb mixture evenly over the casserole.

              Bake: Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the breadcrumbs are golden brown.
