Cheesy Broccoli Chicken and Rice Casserole

2 cups cooked chicken, shredded or diced

2 cups broccoli florets, steamed

1 cup long-grain white rice, uncooked

3 cups chicken broth

1 cup sharp cheddar cheese, shredded

1 cup cream of chicken soup (or homemade equivalent)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Rice: In a medium saucepan, combine the uncooked rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-18 minutes or until the rice is cooked and has absorbed all the broth.

      Mix the Base: In a large mixing bowl, combine the cooked chicken, steamed broccoli, cooked rice, cream of chicken soup, garlic powder, onion powder, half of the cheese, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

        Assemble the Casserole: Lightly grease a 9x13 inch baking dish with olive oil. Pour the chicken and rice mixture into the dish, spreading it evenly.

          Add Cheese & Topping: Sprinkle the remaining cheese on top of the mixture. If you like a crunchy topping, mix the breadcrumbs with a tablespoon of olive oil and sprinkle over the cheese.

            Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, until the top is golden and cheesy, and everything is heated through.
