2 cups cooked white rice (preferably chilled)

2 cups fresh or frozen broccoli florets

1 cup shredded sharp cheddar cheese

1 cup cream of mushroom soup (or homemade)

½ cup milk

1 small onion, finely chopped

2 cloves garlic, minced

½ teaspoon salt

½ teaspoon black pepper

¼ teaspoon paprika

¼ teaspoon garlic powder

½ cup breadcrumbs (preferably panko for extra crunch)

2 tablespoons melted butter

½ cup grated Parmesan cheese (for topping)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Sauté Aromatics: In a large skillet over medium heat, add a drizzle of oil and sauté the chopped onion until soft and translucent (about 3-4 minutes). Add the minced garlic and cook for another minute until fragrant.

      Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onion and garlic, broccoli florets, cream of mushroom soup, milk, cheddar cheese, salt, pepper, paprika, and garlic powder. Mix until well combined.

        Transfer to Casserole Dish: Pour the rice and broccoli mixture into a greased 9x13 inch casserole dish, spreading it out evenly.

          Prepare the Topping: In a small bowl, mix the breadcrumbs with melted butter and sprinkle this mixture evenly over the casserole. Top with grated Parmesan cheese for an extra cheesy crunch.
