Ingredients
  

  • 2.0 cups fresh green beans, trimmed and cut into 1-inch pieces
  • 1.0 cups mushrooms, sliced
  • 1.0 small onion, finely chopped
  • 2.0 tablespoons olive oil
  • 2.0 cups shredded cheddar cheese, divided
  • 1.0 cups sour cream
  • 1.0 cups crispy fried onions, plus extra for topping
  • 1.0 teaspoon garlic powder
  • 1.0 teaspoon onion powder
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 1.0 teaspoon Worcestershire sauce
  • 1.0 package phyllo dough, thawed
  • 0.5 cups unsalted butter, melted

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large pot of boiling salted water, blanch the green beans for about 3-4 minutes until bright green and slightly tender. Drain and transfer them to an ice bath to stop the cooking process. Once cooled, drain again and set aside.
  • In a skillet, heat the olive oil over medium heat. Add the chopped onion and sliced mushrooms, sautéing until the onion is soft and translucent, about 5-7 minutes. Remove from heat.
  • In a large mixing bowl, combine the sautéed onion and mushrooms with the blanched green beans. Add 1.5 cups of shredded cheddar cheese, sour cream, crispy fried onions, garlic powder, onion powder, black pepper, salt, and Worcestershire sauce. Mix until everything is well combined.
  • Lay out one sheet of phyllo dough on a clean surface. Brush with melted butter, then layer another sheet on top. Repeat this process until you have about 4-5 layers. Cut the layered dough into squares (about 4x4 inches).
  • Press each phyllo square into a greased muffin tin, forming cups. Repeat this with the remaining phyllo dough until all the cups are filled.
  • Spoon the green bean mixture into each phyllo cup, filling them generously.
  • Sprinkle the remaining 0.5 cups of cheddar cheese and extra crispy fried onions on top of each filled cup.
  • Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the phyllo is golden brown and crispy, and the cheese is bubbly.
